Let's start off with making the rub. This rub is perfectly smokey, sweet and deliciously gluten free. We then marinate the smoked chicken in the rub for 24hours and then proceed to grill it in a perfectly heated oven. Recipe details down below, Let's get cooking!!

1/4 A cup of brown sugar

2 tea spoons chilli oil

1 table spoon garlic powder

1 table spoon Oregano

1 teaspoon Salt

2kg of smoked chicken

Prep
Take the chicken and remove all the inside parts that need to be put aside, like the liver, neck, etc.
Place the chicken and on a cutting board and cut it into chunks. Place in a 9x13 glass oven friendly dish.
In a small bowl, mix all the dry rub ingredients listed above. Generously rub the chicken with the mixture until rub is gone.
Place plastic wrap over the dish and refrigerate overnight. We like to marinate chicken for at least 8 to 12 hours.
Cook
After the chicken has marinated, Preheat oven to 450°F.
Bake for 15-18 minutes, or until the chicken is cooked through and no longer pink. Cooking time will depend on the thickness of the chicken pieces, so I recommend using a cooking thermometre to know exactly when it is fully cooked. The thickest part of the pieces, it should be 165°F.
If you want the chicken to be a little bit browned and crispier on top, you can turn the broiler on high for the final 3-5 minutes and broil the chicken until it is cooked through and golden on top. Keep a close eye on the chicken so that it does not overcook and/or burn.
Once the chicken is cooked, remove the pan from the oven, transfer the chicken to a clean plate, and loosely tent the plate with aluminum foil. Let the chicken rest for at least 5-10 minutes.
Serve warm. Or, refrigerate in a sealed container for up to 3 days, or freeze for up to 3 months.
Recipe Note
Garnish with Coriander when serving!! Serve with a side of oven baked potatoes.
